Hugh John Barry – Smoked Meat
Hugh John is a 1999 graduate of Iowa City High School and 2003 graduate of UNI. He is currently a Principal Actuary at Mercer Health and Benefits. Hugh John and his wife, Katie, have a first grader at Regina.
Mike Brandt ’89/Ted Sueppel ’89 – Jambalaya
Iowa City Catholic Grade School 6th Grade Class of ‘83. Regina High School Class of ‘89. Friendship began in Kindergarten in ‘77. For over 40 years, Ted and Mike have been involved in each other’s lives. And they both contribute that to the Regina Catholic Community. The family-first environment that resonates through Regina is something that they both believe is the reason for their life-long friendship. As classmates, teammates, roommates, coaches and parents of previous and current Regina students, it’s clear they have many experiences together through Regina, dating back to the early 70’s and running through today. Ted and Mike are extremely excited to be part of the first ever Regal Eats…Cooking for a Cause, and look forward to sharing in yet another Regina community experience.

Myrna Boyle – Dessert Bars
Myrna is a graduate of University of Iowa and currently the Chief Risk Officer at Fidelity Company. Her family includes husband Joe Boyle, daughter Claire (6th grade) and son Finn (4th grade), both who attend Regina Elementary. Myrna enjoys travel, baking (not cooking!), and attending kids activities.
Joe Clark ’92/Andy Gahan ’92 – Authentic Italian Meatballs & Sauce
Joe was born and raised in Iowa City. Joe was a Business Manager for a local real estate company until he opened his own real estate firm, Commercial Realty Iowa City LLC, in 2014. Joe specializes in commercial property, rental property and land development in the Iowa City area. Joe loves the game of basketball, and played regularly for the first 40 years of his life. He has coached all of his children in youth basketball for the past 10 years. Joe is now an avid cyclist and enjoys spinning daily and riding on Ragbrai. Joe married his high school sweetheart, Beth (LaBrecque) Clark in 1998. They have four beautiful children, Jacob (18), Patrick (16), Abby (14), and Alli (12). All of them attend Regina High School as the third generation of his family in the Catholic education system (his mother Loretta Rocca Clark graduated in 1959). Joe enjoys watching his children on a daily basis play basketball, baseball, softball, track, volleyball, football, golf and dance.
Andy Gahan was born and raised in Iowa City spending his entire life living on the east side of town. He is currently the Principal at Coralville Central Elementary. Andy was the head high school baseball coach at Regina High for 16 summers from 1999 – 2014 and was also part of the Regina Football staff for 8 seasons (2007 – 2014. Emily (Dickens) Gahan and Andy have been married for 18 wonderful years. They are blessed with three daughters, Elizabeth (Elly, junior) 16, Annabelle (Annie, sophomore) 15, and Natalie (6th grader) 10. The three girls attend Regina and are very active in all things Regina has to offer.
Alison Demory – Apple Crisp
Alison is the Nutrition Director for Iowa City Schools. She is a registered dietitian who completed her undergraduate work at the University of Nebraska and her dietetic internship at the University of Iowa. She enjoys cooking for her husband, John and their three boys, Adam, Aaron and Drew!
Ryan Eckhoff ’89 – Double Smoked Wings
Ryan has been involved in construction for 27 years in the Iowa City/Cedar Rapids area. He is currently a superintendent for Day Mechanical Systems out of Cedar Rapids. Ryan has been so generous in sharing his cooking abilities as a three-year veteran of the Pathways fundraiser, Men Who Cook as well as an inaugural chef for the Regal Eats…Cooking for a Cause fundraiser.
Keely Hinkel/Jeni Gaffey ’03 – Asian Lettuce Wraps
Keely Hinkel is the mother to 2 amazingly active and sweet boys–Holton (3rd grade) and Huxin (kindergarten). The famous Ed Hinkel is LUCKY enough to have been married to her for the last 11 years and has putting up with her since freshman year of college! Their family enjoys spending time outdoors, playing or watching sports and playing games. Keely is happy to be taking part of this inaugural event with one of her WEIRD friends, Jeni Gaffey!
Jeni Gaffey has been married to husband Robert for 9 fun and crazy years. They have 4 kiddos with 2 of them attending Regina, the place they met. She is excited to be a part of this new Regina fundraiser and hopes it continues on for many years to come!
Sandy Hamilton – Egg Rolls and Lo Mein
When the Hamilton Family, Tom, Sandy, Madeline, Jackson and Sawyer, moved back to Iowa City in 2010, they needed to find a school for their two oldest children, Madeline in fourth grade at the time and Jackson in first grade. (Little brother Sawyer would start kindergarten the following year.) After four visits and A LOT of talking to Mrs. Vincent and Mrs. Von Feldt (assistant principal at time) they knew Regina was the perfect fit for them. Today, this decision has proven to be the best decision for their family. When they visited, it felt so much more like a “home away from home” for their children. And the people really felt like family. With their kids now a senior, a 9th grader and a 7th grader, Regina has proven to be more than a place where their children go to learn. They have been fortunate to meet and make lifelong friendships that will last beyond the years their children will spend at Regina.
Brett Lincoln – Pork Dish
Saturday November 4th , 1989…Iowa vs Illinois football game… Nationally televised game at Kinnick Stadium….That was the fateful day that would forever change my life. Trolling around at half time of the game, which Illinois was up 24-0, I came upon a group of friendly revelers whom I tried to purchase a beverage from…being law abiding citizens that they were, they indicated I could have one as they couldn’t legally sell me one. After spending the second half with them enjoying several more beverages…finally one of them whom was standing on a curb pronounced that I was pretty short…I indicated to him that he was standing on a curb and I wasn’t. He proceeded to tell me that I was into them for quite a few beverages….I reminded him that I had offered to purchase the beverages…He then indicated that I didn’t have to pay for the beverages……I just had to take his sister. Yes…that is how I met one Katherine Brandt….. the rest is history.Katy and I moved from Davenport back to Iowa City in in 1993 or so …. I am in Automation Sales and travel extensively throughout North and South America….I thought there would be nothing better than living in the same town as the rest of the Brandt clan…thus cutting down on calls that used to receive early in the morning from wherever I was that something was not working and how should she fix it. With 6 brothers, 1 sister and a mother and father in town…my worries were over. .With Katy as a 1st grade teacher in the Elementary and both my son’s, Matt and Sam, as distinguished Regina alumnus…..I am very happy to share one of my favorite recipes for this very worthy event. I have made it on several occasions with rave reviews. My many relatives have sampled my dishes over the years and they seem to like them. I enjoy cooking as my wife burns toast and forgets to put pumpkin in pumpkin bars, but I digress. I have definitely enjoyed being part of the Regina community and participating/attending many events. Aside from cooking I stay busy honing my ever changing golf skills …staying on the top of the latest technology, smoking a good cigar and walking my dogs.
Joel & Maria McCaw – Smoked Meat (Joel) – Cheesecake (Maria)
Joel and Maria McCaw are proud parents of Regina Grad, Cole White. Joel is an owner of Ace Auto Recyclers in Iowa City and Maria is a partner at Urban Acres Real Estate. Together, Joel and Maria have a total of 4 children. Life is typically busy at the McCaw household. They enjoy the outdoors, family and friends and of course great food! Enjoy!
Susan Moore ’97 – Cinnamon Honey Grilled Pineapple
Susan is a 1997 graduate of Regina High School. She attended the University of Iowa for both her undergraduate and graduate degrees and is a CPA. She is currently the SVP, Director of Risk Management at Hills Bank and Trust Company. Susan and her husband, Thomas, have two children attending Regina elementary.
Mike Stein – Sugar Cookies
Mike has been a Regina parent since 1999. He and his wife Deb have 4 Regina Regals. Allison ’13, Hannah ’15, Sam ’17 and Luke ’19. He has enjoyed watching the many successful athletic teams his children have been fortunate enough to be a part of at Regina! He is a graduate of Creighton University and is a pharmacist and owner of Pharmacy Matters.
Rob Sueppel ’87 – Gumbo
Rob is a graduate of Regina High School, Class of 1987. For the past 12 years, he has been the District Director for Congressman Dave Loebsack. He also was a District Representative for Congressman Leonard Boswell from 1997 to 2006, living in Burlington and Williamsburg, Iowa. Prior to his work in government he coached Regina baseball from 1988 to 1996, as the Head JV Coach and the Head Varsity Coach. He is married to Stacy Sueppel (Brown) who is also a graduate of Regina (‘91). She has been teaching at Regina High School since 2005. Two of Rob and Stacy’s four children have graduated from Regina. Michael (‘16) now a Junior at Iowa State University and Jacob (‘18), now a Freshman at the University of Iowa. Their daughter Tierney is a Freshman at Regina and daughter Maggie is in 5th grade at Regina Elementary.
Dan Wegman/Mike Venzon – Pesto Crostini
Dan is looking forward to teaming up with his brother-in-law Mike Venzon for Regina Eats. Dan is an Iowa City native and is a University of Iowa graduate. Although Dan was a Little Hawk, he was introduced to the Regina community by his wife Bobbie (Jensen). Dan loves to cook at home for his family and enjoys planning out food for Hawkeye tailgates year round. Dan and Bobbie have two daughters. Annie is in kindergarten at Regina and Mollie is two and looking forward to joining her big sister as a Regal in the preschool next year. Dan sells insurance for AW Welt Ambrisco insurance. Dan and Mike are frequently found chatting “food” and hope you enjoy what they have prepared for the first Regal Eats!
Mike is teaming up with his brother in-law Dan Wegman for tonight’s event. Mike moved to Iowa City in 2003 after graduating from St. Ambrose University and became a part of the Regina family when his son Brady, who is now in 4th grade, started at Regina preschool. Mike then won over Regina alumna Jamie (Jensen) with his mad cooking skills and they married in 2016. He enjoys cooking and baking for his family and friends, and was recently given the nickname “Snax” from Regina family friends for always providing food during baseball games and get togethers. Mike is excited to be a part of the first Regina Eats event and hopes you enjoy what he and Dan have prepared for you tonight!
Jeff Wallace – Wallace Caribbean Jerk Tacos
Jeff has three kids who have went to Regina…Brady ’18, Kennedy ’19, and Madigan. He is also the Head Girls Basketball Coach at Regina and serves on the Booster Club Hall of Fame committee. From 1999 to 2005 he was the Athletic Director at Regina. Jeff is a 1985 graduate of Clear Creek High School and competed yearly against Regina and who now make up some of his close friends.
Best memory as an AD at Regina: Getting into a screaming match with Tom Brandt over the phone in my first year. Worst memory as an AD at Regina: I was super sick and holding my bowels while coaching at the US Cellular Center to go to state. I was calculating exit strategies to leave the court for the restrooms.
Best memory playing/coaching against Regina: Playing Regina in football and Tim Simpson got an interception and piling on the tackle and digging out his eyes. He was gonna kill whoever did it until he saw it was me. #cousins Worst memory playing/coaching against Regina: “Allowing” Chris Lehman to record his record setting catch against me in football. What can I say…I’m a nice guy.
